Humans have been swimming since antiquity for survival, recreation, and exercise. Historians and archaeologists have found cave paintings and written scripts that depict swimming as a common and enjoyable activity.

Studies have shown that swimming offers many health benefits. Because a swimmer uses all of his or her muscles while swimming, the activity is an excellent all-around workout. Not only does it burn substantial amounts of calories, it also increases heart activity and builds muscle strength. In addition, swimming can reduce stress and help people relax.

In young children, swimming can help build posture, increase coordination, and flexibility, and can help with motor development.

It’s likely to be sunny and hot today. Find a few friends and swim a couple laps in the pool. Then, let the pool party begin!

Why not start today by visiting one of the local Farm stand or weekly Farmer’s Markets in our area. Eating a diet with plenty of fruits and vegetables has been linked to improved health, and for good reason. Veggies and fruits (both fresh and frozen) are loaded with vitamins, minerals, fiber, and antioxidants, which have been shown to protect against chronic diseases such as heart disease and cancer.

Herbs are perhaps the easiest plants to grow and can be grown in containers on your patio. Herbs grow like weeds, so you’ll probably have more than enough. Choose one or two herbs to start, such as parsley, basil or rosemary. Don’t worry if you have too much by summer’s end. An excess of basil can be made into pesto, frozen in ice cube trays and stored in the freezer to use during the fall and winter. And, all herbs can be dried.

The first Groundhog Day was February 2, 1887. The legend dates to early German settlers in Pennsylvania, who had a tradition that if the sun shone on Candlemas Day -celebrated on Feb. 2 in recognition of Christ’s presentation at the Temple –   the snow would swirl in May. The early settlers adopted groundhogs, which were plentiful in the area, as harbingers of the tale.

Punxsutawney Phil is America’s most famous groundhog. He’s also the first and official forecasting critter. If Phil comes out of his little burrow and sees his shadow, there will be six more weeks of winter. If he doesn’t see his shadow, then it’s time for spring!

Each year, Phil will relay his prediction to the head of the Inner Circle, the group of men in charge of feeding and taking care of Phil — they’re the guys with the big top hats. The president will then announce it to everyone gathered.

The Groundhog Club’s records show that Phil saw his shadow 102 times and saw no shadow 18 times between 1887 and 2016.

As for whether he’s been right or wrong — that depends on where you live. Weather varies by location. The Washington Post actually studied his findings compared to temperatures across the country between 1984 and 2014, and likened his being right to a coin toss. It’s all just chance.

There are other weather-predicting animals around the country. Chattanooga, Tennessee has “Chattanooga Chuck,” Dunkirk, New York has “Dunkirk Dave,” and Asheville, North Carolina has “Nibbles.” Lousy meteorologist or not, at least he’s cute, right?

The Winter Wonderland Light Show began December 1st at 7 p.m. at the Port Saint Lucie Community Center.  Get in the spirit and stop by the Community Center to see this “one of a kind” light and sound experience.  Enjoy the light show daily  through December 31, 2016, during normal evening business hours.

In October, pumpkins are literally glowing. So, why not put two of your favorites together…..pumpkins and cheesecake!?

They make a great dessert. They are both nutritious and healthy.

It’s easy to enjoy this special day. Go to a cheesecake store or bakery, and buy a pumpkin cheesecake. Or, better yet, make a homemade pumpkin cheesecake. Its fun and it’s easy.

Here is a Pumpkin Cheesecake recipe to try.

For the Crust:

1 3/4 cups graham cracker crumbs

3 tablespoons  brown sugar

1/2 teaspoon ground cinnamon

1 stick melted  butter

In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch spring form pan. Set aside.

For the Filling:

3 (8-ounce) packages cream cheese, at room temperature

1 (15-ounce) can pureed pumpkin ** not pumpkin pie filling **

3 eggs plus 1 egg yolk

1/4 cup sour cream

1 1/2 cups sugar

1/2 teaspoon ground cinnamon

2 tablespoon all-purpose flour

1 teaspoon vanilla extract

Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the cinnamon. Add flour and vanilla. Beat together until well combined.

Pour into crust. Spread out evenly and place in oven for 1 hour** place a cookie sheet underneath ** Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

Top with whipped cream and enjoy ** yummmmmm **
